Pina colada
Piña colada¶
- 2 oz Pineapple juice
- .25 oz Lime juice
- .75 oz Coconut Cream Simple (Coco Lopez Alternative)
- combine a can of full fat coconut milk with the same measure of 2:1 simple syrup
- (maybe) frozen pineapple chunks
- 2 oz Plantation Aged Rum / Jamaican Rum
- (maybe) dash of elemakule tiki bitters

I tried a lot and my favorite is:
- 2 oz pineapple
- 1 oz coconut cream or a little more even (I’ve used coco lopez but might look into a cheaper option)
- 2 oz appleton 12 year - Jamaican rum is so good in a pina
- pinch of salt or some drops of saline solution
- (optional) dash of elemakule tiki bitters
- 6 or so frozen pineapple chunks - very important to get the right texture
- A couple of ice cubes
Blend until very smooth. The pineapple chunks will help the mixture have a better texture/emulsify it to a degree. But if you have too many then it has too much pulp to it.

Coconut cream is usually dehydrated meat from a mature coconut shredded and ground into a fine powder then rehydrated with a small amount of young coconut water. Depending on the hydration level the consistency can range from gelatin to half & half. Coconut milk is usually more hydrated than the cream.

If you dislike or don’t want to use Coco Lopez simply combine a can of full fat coconut milk with the same measure of 2:1 simple syrup. Gets you to essentially the same place for a fraction of the cost. I’ve made it with and without the rum blend, it’s much better with the above blend or something close to it. Enjoy
