General tso sauce
Sauce¶
- 100 g (1/3 cup) chicken stock (or Water)
- 30 g (2 tbsp) soy sauce
- 20 g (1 tbsp + 1 tsp) black vinegar
- 40 g (3 tbsp) brown sugar
- 10 g (2 tsp) chili garlic paste
- 5 g (1 tsp) sesame oil
- 15 g (1 tbsp) hoisin sauce
Aromatic Base¶
- 10 g (2 tsp) neutral oil
- 1-inch knob of ginger, minced
- 2 cloves garlic, minced
- 4 Arbol or dried Chinese red chiles, cut in half
Cornstarch Slurry (as needed)¶
- 10 g (2 tsp) water
- 5 g (1 tsp) cornstarch
