How to degas beans

Steps
  1. soak, drain, and rinse beans
  2. add de-gassing herbs and spices
  3. pressure cook the beans

  4. soak a. at least 8-hours – Cover the beans in filtered water with at least enough water so you can touch the beans with your middle finger’s tip and have the water cover your second knuckle. b. speed soak cover the beans with filtered water, cook on high-pressure for 2 minutes in instapot

  5. drain & rinse
  6. bring beans to boil, skim off scum/foam
  7. add 1 heaping teaspoon per ever 3-cups beans of a “degassing herb”
    • degassing herbs: ajwain, epazote, ginger, cumin, fennel, asafoetida
    • ajwain – 1/2 teaspoon for every 2/3 cup dried
    • epazote – 1 tablespoon for every 1 cup dried
Beans that don’t need degassing
  • lentils – red, green, French
  • black-eyed peas, mung, split peas

  • 20-23 min – navy beans
  • 25 min – starting point for white beans
  • 30 min – Great Northern beans

Let the pressure release naturally

  • Cannellini beans should be stored in shallow, airtight containers or resealable zip-lock bags in the refrigerator.
  • They will keep well in the refrigerator for 3 to 5 days
  • Bacteria grow quickly at temperatures between 40°F and 140°F, so cooked cannellini beans left out at room temperature for more than 2 hours should be discarded.
Ingredients
  • 1 cup Cannellini beans, or other white beans, rinsed
  • 3 cups Water , or vegetable broth
  • 1 Bay Leaf, optional
  • 1/2 teaspoon Salt

  • Soak

  • Add the beans, bay leaf, salt and water to the Instant Pot Use
  • Add 3 cups water for soaked beans (or 2 cup for overnight soaked beans)
  • pressure cook on high
  • Cannellini Beans – 12 minutes for overnight soaked or 35 minutes
  • Great Northern Beans – 10 minutes for overnight soaked or 30 minutes
  • Navy Beans – 8 minutes for overnight soaked or 25 minutes
  • Once the instant pot beeps, let the pressure release naturally
