Osso buco¶
- 1 medium onion
- 2 carrots
- 2 stalks celery
- 1.5 table spoons garlic
- tomato paste
- 1 cup dry white wine
- 1/2 cup broth
- 2 teaspoons rosemary
- 2 teaspoons oregano
- 1 can (14.5 oz) Tomatoes

(Cut fat onsShanks to avoid folding up), Brown Shanks
- Add onion, carrots, and celery
- Add garlic
- Squeeze in tomato paste (let caramelize a little)
- Deglaze with wine, reduce to half
- Add rosemary, oregano, broth, and the browned beef shank back into the pot. Pour in the crushed tomatoes.
- Pressure cook for 60 minutes
