Osso buco

  • 1 medium onion
  • 2 carrots
  • 2 stalks celery
  • 1.5 table spoons garlic
  • tomato paste
  • 1 cup dry white wine
  • 1/2 cup broth
  • 2 teaspoons rosemary
  • 2 teaspoons oregano
  • 1 can (14.5 oz) Tomatoes
  • .5 teaspoon salt

  • (Cut fat onsShanks to avoid folding up), Brown Shanks

  • Add onion, carrots, and celery
  • Add garlic
  • Squeeze in tomato paste (let caramelize a little)
  • Deglaze with wine, reduce to half
  • Add rosemary, oregano, broth, and the browned beef shank back into the pot. Pour in the crushed tomatoes.
  • Pressure cook for 60 minutes
