Baked Cod w/ Lemon & Garlic

The cod is lightly coated with a spiced flour mixture with coriander, paprika, and cumin. Quickly seared, then baked with lemon juice, Greek olive oil, and lots of minced garlic.

Oil Mixture

  • 5 tbsp Lemon Juice
  • 5 tbsp Olive Oil
  • 2 tbsp Butter

Flour Mixture

  • ⅓ cup all-purpose flower
  • 1 tsp ground coriander
  • ⅓ tsp spanish paprika
  • ⅓ tsp cumin
  • ⅓ tsp salt
  • ½ tsp black pepper

Steps

  1. Preheat oven to 400
  2. Dip on oil mixture
  3. Dredge in flower
  4. Pan Fry (cast iron?)
  5. Add garlic to oil mixture, pour over top of fish (in pan)
  6. Put pan in oven
  7. Top with fresh parsley
