Garlic shrimp zucchini noodles
Garlic Shrimp w/ Zucchini Noodles
Ingredients
- 1/2 pound shrimp
- garlic
- parsley
- lemon
- dry white wine (Pinot Grigio)
- Roma tomato
- Zucchini
- Parmesan Cheese
Directions
In a bowl mix
- 1/2 pound de-veined, thawed shrimp (med-large size)
- 2 cloves minced garlic
- 1 tbsp chopped parsley
- 1/2 tsp kosher salt
- Black pepper
- 1 tbsp olive oil
- Mix and let marinate 10 minutes
In a large skillet add:
- 2 tbsp unsalted butter - melt it
- Add Shrimp, cook each side 1 minute, transfer out into a bowl.
In the simmering butter add
- 2 cloves minced garlic
- 1/2 Lemon’s juice
- 1/3 cup Dry White Wine (Pinot Grigio)
- Let it simmer 2-3 minutes, add
- 1 roma tomato, chopped
- 1 tbsp chopped parsley
- Add the shrimp back in, cook another minute,
- Serve over Zoodles
- Garnish with grated Parmesan Cheese & chopped Parsley
