Garlic shrimp zucchini noodles

Garlic Shrimp w/ Zucchini Noodles

Ingredients

  • 1/2 pound shrimp
  • garlic
  • parsley
  • lemon
  • dry white wine (Pinot Grigio)
  • Roma tomato
  • Zucchini
  • Parmesan Cheese

Directions

In a bowl mix

  • 1/2 pound de-veined, thawed shrimp (med-large size)
  • 2 cloves minced garlic
  • 1 tbsp chopped parsley
  • 1/2 tsp kosher salt
  • Black pepper
  • 1 tbsp olive oil
  • Mix and let marinate 10 minutes

In a large skillet add:

  • 2 tbsp unsalted butter - melt it
  • Add Shrimp, cook each side 1 minute, transfer out into a bowl.

In the simmering butter add

  • 2 cloves minced garlic
  • 1/2 Lemon’s juice
  • 1/3 cup Dry White Wine (Pinot Grigio)
  • Let it simmer 2-3 minutes, add
  • 1 roma tomato, chopped
  • 1 tbsp chopped parsley
  • Add the shrimp back in, cook another minute,
  • Serve over Zoodles
  • Garnish with grated Parmesan Cheese & chopped Parsley
