- 2 Cups brown sugar
- ½ cut kosher salt
- ¼ cup paprika
- ¼ cup smoked paprika
- 1 tsp chili powder
- 2 tps Chipotle chili powder
- 2 tap cyanne pepper
- ⅛ cup pepper
- 1 tsp white pepper
- 2 tsbp garlic powder
- 1 tsp Cajun seasoning
Yellow mustard
Fat cap up
Internal temp 200 (195 sauce it, 197 pull it) Stall around 160
Get grill to keep around 225 (200-300)
Wrap in foil, sit 30 minutes
