Mediterranean-Style Grilled Zucchini Salad

Ingredients

• 4 zucchini squash (2 lbs)
• EVOO
• cumin (1 tsp)
• garlic (1 clove)
• salt + pepper
• fresh parsley (1 cup packed)
• fresh tarragon (2 tsp chopped)

• feta or goat cheese (optional)

• toss squash with EVOO & cumin

• fry / char zucchini
• add rest of ingredients
• top with crumbles of cheese
