Baked potato
Baked Potato¶
Higher the starch the better for baked potatoes
- Pre-head oven to 450 degrees
- Poke holes in potato
- 1/2 cup water to 2 table spoons of salt
- Brine potato (just a few seconds works)
- Transfer to wire rack
- Cook until register 205 degrees internal temp (takes ~45 minutes to an hour in oven)
- Brush outside with vegetable oil
- Put back in oven for 10 minutes to crisp up skin
