Baked Potato

Higher the starch the better for baked potatoes

  1. Pre-head oven to 450 degrees
  2. Poke holes in potato
  3. 1/2 cup water to 2 table spoons of salt
  4. Brine potato (just a few seconds works)
  5. Transfer to wire rack
  6. Cook until register 205 degrees internal temp (takes ~45 minutes to an hour in oven)
  7. Brush outside with vegetable oil
  8. Put back in oven for 10 minutes to crisp up skin
