Ingredients

  • 2 cups dried chickpeas
  • 1/3 cup olive oil
  • 1/3 cup tahini
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • 1 lemon, juice of
  • 3 cloves of garlic

Directions

  1. Rinse chickpeas
  2. Soak overnight chickpeas in water (at least 2 inches above)
  3. Rinse chickpeas
  4. Bring water, chickpeas, and salt to a boil, then turn heat to low and simmer for 1 hour (or until chickpeas are soft)
  5. Drain liquid, and reserve
  6. Add all ingredients to food processor, add reserved liquid as needed for desired texture

Roasted Garlic & Red Pepper Hummus

Ingredients

  • 2 large red bell peppers, seeds removed
  • clove of garlic
  • 2 tsp (10 mL) balsamic vinegar
  • 1/2 tsp paprika powder
  • 1/2 tsp cajun powder (optional)

Directions

  1. Roast garlic & red bell peppers in ban on 450 for 25 minutes
  2. Add roast garlic and other ingredients to the hummus
