Hummus
Hummus¶

Ingredients¶
- 2 cups dried chickpeas
- 1/3 cup olive oil
- 1/3 cup tahini
- 2 teaspoons salt
- 1 teaspoon cumin
- 1 lemon, juice of
- 3 cloves of garlic
Directions¶
- Rinse chickpeas
- Soak overnight chickpeas in water (at least 2 inches above)
- Rinse chickpeas
- Bring water, chickpeas, and salt to a boil, then turn heat to low and simmer for 1 hour (or until chickpeas are soft)
- Drain liquid, and reserve
- Add all ingredients to food processor, add reserved liquid as needed for desired texture
Roasted Garlic & Red Pepper Hummus¶

Ingredients¶
- 2 large red bell peppers, seeds removed
- clove of garlic
- 2 tsp (10 mL) balsamic vinegar
- 1/2 tsp paprika powder
- 1/2 tsp cajun powder (optional)
Directions¶
- Roast garlic & red bell peppers in ban on 450 for 25 minutes
- Add roast garlic and other ingredients to the hummus
