Flaxseed Muffins

Ingredients

  • 2 cups flaxseed, ground
  • 1 Tbsp baking powder
  • pinch of salt (optional)
  • 5 eggs (room temp)
  • ⅓ cup coconut oil, melted
  • ⅓ cup liquid sweetener of choice (I used pure maple syrup)
  • ⅓ cup water (room temp is fine)

Directions

  1. Preheat oven to 350 degrees. Whisk dry ingredients together. In separate bowl, whisk eggs and other liquid ingredients.
  2. Mix wet with dry and then pour in muffin tins (I highly suggest investing in silicone muffin molds-not need to mess with liners and greasing)
  3. Bake for 20-25 mins until tops are firm but still have give.
