Flaxseed Muffins¶

Ingredients¶
- 2 cups flaxseed, ground
- 1 Tbsp baking powder
- pinch of salt (optional)
- 5 eggs (room temp)
- ⅓ cup coconut oil, melted
- ⅓ cup liquid sweetener of choice (I used pure maple syrup)
- ⅓ cup water (room temp is fine)
Directions¶
- Preheat oven to 350 degrees. Whisk dry ingredients together. In separate bowl, whisk eggs and other liquid ingredients.
- Mix wet with dry and then pour in muffin tins (I highly suggest investing in silicone muffin molds-not need to mess with liners and greasing)
- Bake for 20-25 mins until tops are firm but still have give.
